A Depression-era work from Mexico on the preservation of fruits and vegetables. Each recipe includes a list of ingredients, followed by a paragraph of preparation instructions. There are standard recipes for canning salsas, catsup, pickles, compotes, as well as more unusual things such as preserving cabeza, lengua, and numerous other parts of a pig. Sections on juices and butters also included. We locate a single copy in OCLC, at the University of Texas at San Antonio.
