A delightful collection of Mexican recipes compiled by an unnamed but culinarily-curious cook in Mexico. The recipes range widely in composition, comprising a mixture of traditional Mexican recipes and more unusual fare, with detailed instructions for producing dishes such as gordas de arroz, cubiletes de almendra, biscochas de Mantequilla, pichones en vino, pastre de nueces, asada aleman, crema de naranja, panochitas de leche, pichones en vino, liebre en pebre, pargo relleno, and many others, including multiple recipes for tortas, salsas, biscuits, creams, soups, chicken, and tongue. Several of the dishes call for various meat dishes in wine. Some of the dishes emanate or indicate regional influences, such as chongos Zamoranos, crema Espanola, and rosquillas al estilo de Castillas. Preparation instructions range from a few lines to, in many cases, almost a page of handwritten text. A wonderful assemblage of eclectic Mexican recipes.
